Friday Night Pizza with a twist!

I just enjoyed an awesome homemade pizza.  I tried the Publix (local grocery store, for you northern readers!) pizza dough from the bakery.  When I came home to pull it out of the fridge to rise, it had already begun to rise in the fridge, and exploded out of the bag! Well.... I thought I might be calling Papa Johns, BUT!! I salvaged the dough and got to work.
 
Tonight's toppings:: oven roasted onion, red pepper and zucchini with a dash of salt and pepper
Tonight's sauce:: lemon basil marinara
Tonight's cheese:: shredded Italian cheese mix, and mozzarella
Tonight's final product:: AMAZING!!

Its a good thing I was cooking for only me, because with the dough explosion the pizza was smaller then normal and I had a hard time walking away from it! I still love the traditional taste of cheese and pepperoni, but this version is a keeper!

Some of you may still be trying to chew/taste the lemon basil marinara.  Since my basil plant is growing out of control, I had to find ways to use it. I didn't want to dry it just yet so I stumbled upon this recipe and tried it. The first batch was a great success on penne so I made a second batch and froze it.  After dodging rain/lighting/thunder on my way into the grocery store, I forgot to grab pizza sauce. So there you have it, and forgetful rain soaked chef reached into her freezer and grabbed the closest thing.... and the lemon zest with the fresh veggies was delicious!

P.S... I know a few of you are chuckling that I called myself a chef :)

yum pizza. I dream about pizza these days... not sure if it's a dream or nightmare though!

Even though I dont like some of the things on this pizza it looks and sounds soooo yummy!!
