1.23.11 Menu

Quick Post::

Sunday: Chicken Roast
Monday: Turkey Burgers (they have gotten voted off the past 2 times due to extra leftovers!)
Tuesday: Homemade Pizza
Wednesday: Caribbean Jerk Chicken Strips
Thursday: Spaghetti and Meatballs
Friday: Pork Chops
Saturday: Stir Fry

I'll add the rest of the post tomorrow with grocery list and recipes :)  The week has already been altered a little bit because I got home late this afternoon from painting my friends house and didn't want to wait an hour for dinner! So it looks like Sunday and Thursday were flipped at my house!



Chicken Roast  ~ Preheat oven 345 degrees.
Put EVOO in casserole dish. Coat the chicken (3 breasts still frozen) and small red potatoes with EVOO also. Add Sea Salt, pepper, etc..
Place in oven 20-25 min, then add carrots, wait another 20 min add onions, wait 10 min add fresh garlic. Towards the end add small amounts of cilantro, parsley and crushed red pepper.
Cook for about 1 hour total.

Turkey Burgers
1 lb ground turkey
Add chopped onion, red pepper, and cilantro. Add a dash of grill seasoning, garlic powder and worcestershire sauce. Grill for approximately 4-6 minutes each side.

Caribbean Jerk Chicken Strips
1 package of chicken strips
Use egg yolk/milk and bread crumb method to bread the chicken strips.
Place in sauce pan over medium heat, and add Caribbean jerk marinade to pan. Cook until done.
